Baked sweet potato wedges

Ingredients for 4 servings:

  • 4 large sweet potatoes
  • 4 tbsp olive oil
  • Herbs of Provence

Peel the sweet potatoes and cut them into eighths, halving the eighths again if necessary. Toss the potato wedges in a bowl with the olive oil, ensuring they are well coated on all sides. Then arrange the potatoes on a baking sheet lined with parchment paper and sprinkle generously with Provençal herbs. Bake in a preheated oven at 200°C for about 45 minutes. Excess oil can be removed with kitchen paper after baking. Serve hot with a quark dip or other sauces of your choice.
