Spinach with raisins and pine nuts

Ingredients for 6 servings:

  • 3 ½ kg spinach, fresh
  • 150 g raisins
  • 5 tbsp olive oil
  • 200 g pine nuts
  • Salt
  • pepper, black

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sort and trim the spinach. Wash thoroughly and blanch in boiling salted water for 10 minutes. Place in a sieve, drain, and squeeze the liquid. Soak the raisins in lukewarm water for 30 minutes, then drain the water and let the raisins drain. Heat the oil in a pan and lightly toast the pine nuts. Add the raisins, stir, and then add the spinach. Mix everything well, season with salt and pepper. Once the spinach is hot, serve from the pan.
