Ingredients for 4 servings:
- 300 g beans, green, fresh or frozen
- 300 g potatoes, peeled, finely diced
- 500 ml tomato puree
- Salt and pepper, black
- Paprika powder
- 1 chili pepper(s), finely chopped
- 2 garlic cloves, finely chopped
- 1 tsp basil, finely chopped
- 1 tsp rosemary, finely chopped
- 1 tsp thyme, finely chopped
- 150 g onion(s), finely chopped
- olive oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Excellent with pan-fried lamb or beef or as a main course with baguette
Cook the potatoes in salted water or broth until al dente (about 5 minutes). Sauté the onions and garlic in a little oil. Add the green beans and sauté until tender but still have a bite. Add the tomatoes and herbs, and season generously with the spices. Stir in the potatoes and heat through. This dish tastes best reheated, making it ideal for guests the next day. As a vegetarian main course, this serves 2 people.
