Spinach with sesame and yogurt

Ingredients for 4 servings:

  • 500 g spinach, firm (frozen will do too)
  • 1 onion(s)
  • 3 cloves garlic
  • 1 piece(s) fresh ginger (size like 2 garlic cloves)
  • 1 tsp coriander, ground
  • 1 tsp cumin
  • 2 chili peppers
  • 2 tbsp clarified butter or ghee
  • ½ tsp curry
  • ½ tsp sugar
  • 1 pinch of salt
  • 150 g yogurt
  • 2 tbsp sesame seeds

Clean and wash the spinach thoroughly, or drain frozen spinach well. Peel the onion and garlic, deseed and rinse the chilies, peel the ginger, and finely dice everything. Mix with the coriander and cumin. Heat ghee or clarified butter in a wok or deep-sided pan. Sauté the onion, garlic, chilies, ginger, and coriander, then add the curry, salt, and sugar. Once everything is well mixed and fragrant, add the drained spinach and let it wilt, tossing gently. The spinach leaves should combine well with the spices. Finally, stir the yogurt into the spinach. Toast the sesame seeds in a dry, dry pan until golden brown and sprinkle over the spinach.
