Sponge cake – apple cake

Ingredients for 1 servings:

  • 3 apples
  • 3 eggs
  • 6 tbsp water
  • 140 g sugar
  • 4 drops of flavoring (lemon or butter)
  • ¾ pack of baking powder
  • 190 g flour
  • Vanilla sugar and cinnamon, for sprinkling

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for 8 pieces, without butter or margarine

Beat the egg whites until stiff. Beat the egg yolks with the sugar and water until frothy. Add the flour, baking powder and flavouring and stir into a smooth batter. Fold in the egg whites. Peel and core the apples and cut them into wedges. Pour the batter into a springform pan and top with the apple slices. Sprinkle with the vanilla sugar/cinnamon mixture and bake at 180°C for approx. 40-45 minutes. The cake should rise nicely, the apples should sink slightly and turn golden yellow. Allow to cool and enjoy fresh. The cake can also be topped with other fruit, e.g. plums, rhubarb, cherries or gooseberries.
