Ingredients for 1 servings:

  • 6 eggs
  • 200 g sugar
  • 100 g flour
  • 100 g cornstarch
  • 25 g baking cocoa for the dark version
  • 25 g vanilla pudding powder for the light version
  • 1 tsp baking powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Separate the eggs. Beat the egg whites until stiff. Gradually add the sugar. Beat until glossy. Stir in the egg yolks. Combine the flour with the cornstarch, cocoa powder (for the dark batter) or vanilla pudding powder (for the light batter), and baking powder, and sift over the batter. Carefully fold everything in. Pour the sponge mixture into a 26 cm springform pan lined with baking paper and smooth it down. Bake in a preheated oven (electric oven: 200°C, fan oven: 175°C, gas mark 3) for about 30 minutes.
