Sponge cake with chocolate shavings

Ingredients for 1 servings:

  • 300 g apples
  • 3 egg whites
  • 200 g sugar
  • 125 g butter
  • 1 tbsp vanilla sugar
  • 3 egg yolks
  • 250 g flour
  • 1 tbsp baking powder
  • 100 g chocolate shavings
  • 100 g cake icing

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

This cake will stay moist for several days.

Finely grate the apples. Separate the eggs. Beat the egg whites until stiff peaks form. Beat the softened butter with the sugar, vanilla sugar, and egg yolks until fluffy. Mix the flour with the baking powder and stir into the egg yolk mixture. Stir in the finely grated apples, along with the chocolate shavings. Finally, carefully fold in the beaten egg whites. Line a loaf pan with baking paper and pour in the mixture. Preheat the oven to 180°C (350°F) and bake on the second rack from the bottom for about 70 minutes. Check the cake is done with a wooden skewer. Let the cake cool and then glaze it.
