Ingredients for 8 servings:
- ½ cube of yeast
- 100 g butter
- 375 g flour
- 1 tsp salt
- 400 g cream cheese, grainy
- 100 g quark (low-fat quark)
- 1 bunch of chives
- 3 cloves garlic
- Salt
- pepper
- 1 bunch of spring onions
- 1 kg tomatoes
- Butter, for greasing
- 3 tbsp capers
- 3 tbsp olive oil
- 8 basil leaves
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Dissolve the crumbled yeast in 200 ml of lukewarm water. Combine the butter, flour, salt, and dissolved yeast in a bowl and knead into a smooth dough. Cover and let rise in a warm place until doubled in size. Mix together the cream cheese and low-fat quark. Cut the chives into small rings. Mash the garlic and stir in with the chives. Season with salt and pepper. Slice the spring onions and slice the tomatoes. Grease a baking tray. Roll out the dough and place it in the pan, pulling up the edges. Spread the cheese and quark mixture on top, scatter the onions and tomatoes over it. Let it rise for another 15 minutes. Sprinkle with capers, drizzle with olive oil, and bake in a preheated oven at 225 degrees Celsius (gas mark 4) for 30-40 minutes. Cut the basil leaves into strips and arrange them on the pizza.
