Refined fried potatoes

Ingredients for 2 servings:

  • 6 boiled potatoes (preferably waxy)
  • 4 tomatoes
  • 4 eggs
  • ½ bunch chives
  • 50 g grated cheese (e.g. Gouda)
  • some oil
  • salt and pepper
  • Paprika powder, hot

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Farmer’s breakfast with a difference

Slice the peeled, boiled potatoes. Heat a little oil in a nonstick pan and fry the potato slices until golden brown. Finely chop the chives and whisk them with the eggs, seasoning generously with salt and pepper. Finely dice the tomatoes and add them to the potatoes. Pour the egg mixture over the potatoes and let the egg set over low heat. Sprinkle with grated cheese. Mix well and finish cooking over high heat. Season with paprika and salt and pepper, if desired, and serve hot.
