Spring Potato Salad
The perfect spring potato salad recipe with a picture and simple step-by-step instructions.
Spring Potato Salad:
- 500 g Diced salt potatoes
- 1 piece Diced paprika
- 1 piece Parsley root
- 1 tsp Finely chopped parsley
- 0,5 piece Fresh celery stalk with leaves
- 1 piece Diced blue onion
- 2 tbsp Pickled capers
- 8 tbsp Corn cooked
- 2 piece Diced brown mushrooms
- 3 piece Diced plum tomatoes
- 50 g Diced smoked ham
- 50 g Cubed cooked sausage
- 3 Pc. Salami slices cut
- 100 ml Homemade yogurt remoulade salad cream, see KB
Topping:
- 2 piece Sliced Gouda cheese
- 1 Tufts Cress (garden cress)
- 3 Pc. Radish
Spring Potato Salad:
- First prepare the yogurt mayonnaise. Boil the boiled potatoes the evening before and dice them cold. Cut all other vegetable ingredients into small pieces and blanch them briefly (except for the mayonnaise and the topping). Chop up the sausage, dice and briefly sear in the pan with the potatoes, vegetables, onions, mushrooms and corn with a little oil. Chill for about 2 hours.
Use:
- The spring potato salad at the right time of year as an accompaniment to many barbecue items and warm meals. Also on the cold buffet with hot sausages.
