Blini with Rocket Cream
The perfect blini with rocket cream recipe with a picture and simple step-by-step instructions.
- 20 g Yeast fresh
- 200 ml Milk
- 1 pinch Sugar
- 60 g Wheat flour
- 80 g Spelled flour type 630
- 1 tsp Salt and pepper
- 2 Eggs
- 20 g Arugula
- 200 g Cream of sour cream
- 3 tbsp Rapeseed oil
- Crumble the yeast and mix with lukewarm milk and a pinch of sugar. Mix the flour and 1 teaspoon salt in a bowl. Gradually stir in the yeast milk and eggs with a whisk and stir to form a smooth dough. Let rise for 15 minutes in a warm place.
- Wash the rocket, spin dry and roughly chop. Mix with sour cream, salt and pepper.
- Heat some oil in a large non-stick pan and add tablespoon-sized portions of dough. Bake on both sides to golden-brown blini on medium to mild heat. Then place on a plate. Process the remaining dough into blini as well. Serve lukewarm or cold with the rocket cream .
