- 7 Potatoes
- 1 teaspoon Salt
- 40 g Branded butter
- 2 Pinches Salt
- First of all: I was served such squeezed potatoes years ago in a hotel in the Black Forest. I liked them so much that I soon copied them at home – we’ve had them quite often since then.
- And if you don’t know “squeezed potatoes”, you should definitely try them – they have nothing in common with a puree, no, they are a completely different tasting dish!
- Preparation 3: Wash the potatoes, peel them and then cut them into smaller pieces. Covered with water and seasoned with a teaspoon of salt, cook for 20 minutes.
- During this time, fry the butter with 2 pinches of salt until it starts to brown. Drain the cooked potatoes and immediately squeeze them directly onto the plates using a potato or spaetzle press, then immediately ladle with the brown butter and serve.
- There was also fried chicory on the cob with small Nuremberg sausages.
