Ingredients for 4 servings:

  • 750 g squid(s), ready to cook
  • 6 large tomatoes
  • 2 tbsp olive oil
  • ¼ liter white wine
  • salt and pepper
  • 1 bunch of parsley
  • Lemon(s), for garnishing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the squid thoroughly, pat dry, and cut into thin rings. Score the tomatoes crosswise, blanch them in boiling water, rinse, and peel them. Dice the tomatoes. Heat oil in a pan and fry the squid. Add the tomatoes and wine, bring to a boil, and season with salt and pepper. Simmer for 3-4 minutes. Wash the parsley, shake dry, and finely chop, reserving a little for garnish. Add to the squid. Season again and let cool. Garnish with lemon and parsley.
