pasta dough

  • 125 g Fresh spinach
  • 2 piece Eggs
  • 150 g Flour
  • 125 g Durum wheat semolina
  • 1 pinch Salt
  • 50 g Flour
  • 250 g Ricotta

chicken

  • 10 piece Chicken breast fillets
  • 1 shot Olive oil
  • 1 pinch Salt and pepper
  • 300 g Mozzarella
  • 3 piece Tomatoes

  • 150 g Sugar snap peas

  • 1 pinch Salt and pepper

Porcini mushroom sauce

  • 75 g Dried porcini mushrooms
  • 3 piece Onions
  • 3 piece Garlic cloves
  • 6 tbsp Rapeseed oil
  • 150 g Diced Bacon
  • 60 ml Brandy
  • 600 ml Cream
  • 3 tbsp Sauce binder light
  • 1 pinch Salt and pepper

Pasta

  1. For the pasta, put the cleaned spinach with the 2 eggs in a narrow mixing bowl and puree finely with a hand blender. This makes about 2 large tablespoons of pureed spinach.
  1. For the preparation of the pasta dough, mix the flour, durum wheat semolina and a small pinch of salt in a bowl with a mixing spoon. Add the spinach mixture and first try using the mixing spoon to mix the ingredients together in this way.
  1. Then continue working by hand and knead everything into a pasta dough, adding a little flour again and again and kneading until a firm but smooth pasta dough is formed, which no longer sticks. Pack this dough in a plastic bag and place in the refrigerator for an hour or overnight.
  1. Then divide the dough into about 4 portions and roll out with a rolling pin. Now take a large, round cookie cutter and cut out the dough. Put a dollop of ricotta on each circle, close it and press the dough firmly at the corners. Cook the tortellini in salted water as normal.

Chicken breasts

  1. First pound the chicken breasts a little wide, then fry them well in oil in a pan and season well with salt and pepper.
  1. Cut the meat into slices. Now put a slice of chicken fillet in each of the 6 serving rings, then a slice of tomato and a slice of mozzarella. Then layer the chicken, tomato and mozzarella again. Then put the whole thing in the oven at 180 ° C for 15 minutes.

  1. Peel and finely chop the onions and garlic. Heat the oil in a high pan and sauté the finely chopped onions and garlic until translucent.
  1. Chop the mushrooms into large pieces and add to the onion and garlic in the saucepan. Fry briefly. Pour in some mushroom water and cook for 15 minutes over low heat. Possibly add more mushroom water.
  1. Fry the bacon in a pan and add to the mushrooms after 10 minutes. Pour in the cream and thicken with a sauce thickener. Add brandy and season with salt and pepper.
