Deffis Allerlei (Detlef Steves)

  • 0,5 piece Fresh broccoli
  • 1 bunch Soup greens fresh
  • 1 tbsp Butter
  • 1 piece Tomato
  • 1 shot White wine
  • 1 l Water
  • 3 tsp Vegetable broth
  • 1 pinch Rosemary
  • 1 pinch Salt and pepper
  • 200 ml Tomatoes happened

Soup vegetables

  • 1 piece Red peppers
  • 1 piece Peppers yellow
  • 0,5 piece Onion red
  • 1 piece Zucchini
  • 1 shot Olive oil
  • 100 g Tomato paste
  • 1 pinch Salt and pepper

antipasti

  • 1 shot Olive oil
  • 1 piece Zucchini
  • 1 piece Eggplant fresh
  • 1 piece Red peppers
  • 1 piece Peppers yellow
  • 200 g Mushrooms
  • 1 pinch Salt and pepper
  • 1 pinch Fresh thyme
  • 1 pinch Chili
  • 1 piece Clove of garlic
  • 1 piece Baguette

Soup

  1. For the soup, clean the broccoli and the soup greens, cut into large pieces and sauté in a high saucepan with a little butter. Then add a dash of white wine and simmer a little.
  2. Now place the whole tomato on top of the vegetables and pour in the water, add the vegetable stock and simmer for another 5 minutes. Add a little rosemary and season well with pepper and salt. Now add the tomatoes and let simmer for another 5 minutes on a low level.

Soup vegetables

  1. For the soup vegetables, clean the red and yellow bell pepper, half the red onion and the courgette and cut into small cubes. Season the vegetables with salt and pepper and fry in olive oil.
  2. Now add half a tube of tomato paste. Then pour the soup through a fine sieve into the vegetable pan and stir well.

antipasti

  1. For the antipasti, clean and chop the vegetables. Heat plenty of oil in the pan and gradually fry the cut vegetables separately, stirring constantly.
  2. Leave the garlic and thyme in the pan with each type of vegetable. Season the vegetables well with chilli, salt and pepper. Now let cool on the plate. Serve with the soup. Baguette goes well with it.
