Star fruit with pistachio brittle

Ingredients for 2 servings:

  • 1 carambola (star fruit)
  • 2 tbsp pistachios, chopped
  • 2 tbsp agave syrup or cane sugar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

vegan sweet, great with ice cream or desserts

Slice the star fruit and place it in a baking dish. Sprinkle with the chopped pistachios coated in sweetener. Bake in an oven preheated to 180°C (top/bottom heat) on the middle rack for about 10-15 minutes. You can add more sweetness if you like. Tastes great with ice cream or desserts.
