Ingredients for 1 servings:

  • 50 g whole wheat flour
  • 100 g rye flour type 1150
  • 200 g wheat flour type 1050
  • 200 g wheat flour type 550
  • ½ cube of yeast
  • 11 g sea salt
  • 0.4 tsp butter
  • 500 ml buttermilk

Instructions

Working time approx. 20 minutes; Rest time approx. 55 minutes; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 15 minutes

Mix everything well and let the dough rise for 40 minutes. Then shape the dough and let it rise again for 15 minutes. Place it in the oven with a bowl filled with water at 200°C (top/bottom heat) and bake for 50 minutes. Remove the bowl of water and bake the bread for another 10 minutes at 215°C (425°F).
