Ingredients for 4 servings:
- 500 g tortellini, good quality, filling as desired
- 250 g cherry tomatoes
- 1 small onion(s)
- 1 small cucumber(s)
- 150 g feta cheese
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- salt and pepper
- 6 tbsp olive oil
- n. B. herbs, chopped, e.g. parsley, thyme, basil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes
Cook the tortellini according to the package directions, rinse in cold water, and drain well. Wash and dice the tomatoes and cucumber, finely dice the onion, and drain and dice the feta cheese. Place everything in a large bowl. For the dressing, whisk the vinegar with lemon juice, salt, pepper, and olive oil. Stir in the chopped herbs. Add the dressing to the salad and fold in. Then add the now-cold tortellini and gently fold in. Season again with salt and pepper, if desired. Store in the refrigerator until ready to serve. Goes great with grilled food or simply with white bread. 450 kcal per serving.
