Stock: Blackberry Jam with Vanilla

- 1 kg Blackberries fresh
- 2 piece Vanilla pods
- 1 kg Preserving sugar 1: 1
- Sort the blackberries and put them in a large saucepan. Cut open the vanilla pods, scrape out the pulp and add to the berries together with the sugar.
- Stir well and let steep for two hours.
- Bring to the boil, simmer for four minutes, remove the pods and then immediately fill them to the brim in hot-rinsed screw-top jars. Turn the glasses upside down and let them cool down.
