Singles Dinner No. 233

Toast the slice of bread and place it on a plate. Spread it with butter and top with the cooked ham. Slice the tomatoes, arrange them on the ham, and season with salt and pepper. Place the basil leaves on top of the tomatoes. Slice the mozzarella, arrange them on the basil, and sprinkle with cayenne pepper. Heat oil in a pan and place two round dessert rings in it. Crack an egg into each ring and fry over low heat with the lid on until fried eggs are golden. Once the egg white has set, lift the dessert rings from the pan onto a large plate using a damp cloth. (The fried egg will stick to the ring.) Use the cloth to hold the rings in place and use a blunt knife to loosen the fried eggs from the rings. Arrange the two fried eggs on the sandwich, sprinkle with chili salt and chives, garnish, and serve.
