Ingredients for 4 servings:

  • 1 ciabatta
  • 4 tbsp red pesto
  • 2 large tomatoes
  • 250g mozzarella
  • 8 eggs
  • 2 tbsp vegetable cream with olive oil for frying
  • some salt
  • some pepper, colorful from the mill
  • 4 slice(s) cooked ham, Italian, large
  • some basil for garnishing

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

An Italian variant

Preheat the oven to 180°C fan/convection oven. Cut the ciabatta in four halves and spread 1 tablespoon of pesto on each half. Then place on a baking sheet lined with baking paper and roast in the preheated oven for about 3 to 4 minutes. Rinse and slice the tomatoes, removing the green stems. Also slice the mozzarella. In a large, non-stick pan, heat the vegetable cream with olive oil and fry the eggs in it until fried. Season with a little salt and a few turns of freshly ground pepper. First cover the ciabatta halves with the tomato and mozzarella slices, then season with some freshly ground pepper, then cover with the ham slices and finally place the fried eggs on top. Serve garnished with some fresh basil.
