Ingredients for 4 servings:

  • 4 rice cakes
  • 4 slices of butter cheese
  • 4 slices of cooked ham
  • 2 shallots
  • 4 gherkins
  • salt and pepper
  • chili flakes
  • Paprika powder
  • 4 m.-sized eggs
  • some butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Using a rice cake as a template, cut out four round slices of buttered cheese and four round slices of cooked ham. Slice the shallots and fry in a little butter in a pan until golden brown, then remove and keep warm. Top each rice cake with a slice of buttered cheese and bake in the same pan with the lid on until the cheese has melted. Place a slice of cooked ham on top of each cheese and scatter some of the shallots on top. Remove the cakes from the pan. Melt approx. 40g of butter in the pan, place four dessert rings in the pan and crack an egg into each ring. Season the eggs and drizzle them with the hot butter using a spoon until a clearly white skin (mirror) has formed over the yolk. Use a knife to loosen the fried eggs from the dessert rings and place them on the rice cakes. Decorate with the gherkins and the remaining shallots.
