Strawberries with marzipan sauce

Ingredients for 4 servings:

  • 750 g strawberries
  • 2 egg whites
  • 200 g cream
  • 1 packet of vanilla sugar
  • 3 egg yolks
  • 4 tbsp powdered sugar
  • 1 pinch of salt
  • 100 g marzipan – raw mass
  • 3 tbsp Amaretto
  • 2 egg yolks
  • 1 tbsp powdered sugar
  • ⅛ liter Marsala

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

For the sauce, break up the marzipan with a knife and mix with the Amaretto. Beat the egg yolks and powdered sugar in a saucepan or bowl until frothy. Place the pan or bowl over a bowl filled with hot water to warm the egg yolk mixture. Then beat the Marsala into the cream until frothy. Stir in the marzipan-Amaretto mixture and let the finished sauce cool. Preheat the oven to 250°C. Wash the strawberries, pat dry, and pick off the stems. Arrange on 4 ovenproof plates or shallow bowls. First, beat the egg whites with the salt, then the cream with the vanilla sugar. Finally, beat the egg yolks with 2 tablespoons of powdered sugar until fluffy. Fold the egg whites and cream into the egg yolk cream and spread over the strawberries. Bake on the top rack of the oven (Gas Mark 6; fan oven 230°C) for 3-5 minutes. Dust with powdered sugar and serve with the sauce.
