Strawberry and melon salad

Ingredients for 4 servings:

  • 700 g strawberries
  • 8 tbsp lemon juice
  • 1 honeydew melon(s) or Galia melon
  • 220 g mozzarella minis
  • Maple syrup or honey
  • pepper
  • 70 ml olive oil
  • 1 pot of basil
  • 70 g ham, raw

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the strawberries, halve them, and marinate them with 4 tablespoons of lemon juice. Then halve the melon, remove the seeds, and cut into wedges, then into larger pieces. If you want to take the time, you can of course also scoop out balls with a melon baller; this looks nicer. Mix a salad dressing with the remaining lemon juice, about 1 teaspoon of honey or maple syrup—depending on your taste—pepper, and olive oil. Arrange the melon, mozzarella balls (or cut one large ball into pieces), and basil leaves on a large platter. Halve the ham slices. Arrange the strawberries and cured ham decoratively. Drizzle the dressing over the top and season with freshly ground black pepper. You can, of course, omit the ham; the salad tastes just as good without it.
