Strawberry-Avocado Salad

Ingredients for 2 servings:

  • ¼ iceberg lettuce
  • 4 strawberries
  • 1 avocado(s)
  • 1 handful of pine nuts
  • some balsamic vinegar, white
  • some lemon juice
  • some olive oil or avocado oil
  • some yogurt, 0.1% fat
  • salt and pepper
  • some honey

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and chop the iceberg lettuce and strawberries. Halve the avocado, remove the pit, and scoop out the flesh from the skin with a spoon, then chop it into small pieces. Transfer the lettuce to a bowl and arrange the strawberries and avocado pieces on top. Toast the pine nuts in a pan until golden brown, let cool slightly, and then add to the salad. For the dressing, combine all ingredients thoroughly. Add to the salad and mix well.
