Strawberry curd with quark

Ingredients for 4 servings:

  • 250 g quark, 40% fat
  • 1 sachet dessert powder (Quarkfein)
  • 300 g strawberries (frozen or fresh)
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 200 ml milk

Instructions

Working time approx. 5 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 5 minutes

Thaw the frozen strawberries overnight in the refrigerator. The next day, set aside 4 strawberries and puree the remaining strawberries, adding the lemon juice and sugar. In a separate bowl, combine the quark with the milk and whisk in the quark filling (the amount of milk may vary depending on the manufacturer of the quark filling and the fat content of the quark). It’s best to alternate the quark and strawberries in dessert bowls and garnish with the whole strawberries. Chill in the refrigerator.
