Strawberry ice cream with ricotta

Ingredients for 4 servings:

  • 200 g strawberries, cleaned
  • 100 g ricotta (sweet)
  • 2 tbsp lemon or lime juice
  • 70 g sugar
  • 1 packet of vanilla sugar
  • 100 ml milk

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Puree the washed and hulled strawberries with the sugar and lemon or lime juice and place in the freezer for half an hour. Combine the ricotta and milk, heating the mixture to make the ricotta easier to blend. Let it cool and add it to the strawberry puree. Place the mixture in an ice cream maker for 50-60 minutes or place it in the freezer for about 6 hours, stirring frequently to make the ice cream smoother. Tip: Also tastes good with blueberries or cherries. For a more vanilla flavor, you can add vanilla seeds and/or half a vanilla pod to the ricotta mixture.
