Strawberry jam with apple

Ingredients for 1 servings:

  • 1 kg strawberries
  • 1 apple
  • 1 lemon(s), juice
  • ½ tsp vanilla, dried
  • Gelling sugar 2:1, half the weight of strawberries, apple and lemon juice together.

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Wash, hull, and halve the strawberries, quartering larger ones. Peel the apple and cut into 1 x 1 cm pieces. Weigh both with the lemon juice and add half the fruit’s weight in preserving sugar, along with the vanilla extract, to a saucepan. Mix and boil gently for 3-5 minutes. Roughly mash the fruit with a potato masher. For a finer consistency, use a hand blender. Pour the hot jam into preserving jars, leave them upside down on the lids for 20 minutes, and then turn them upside down again. I prefer to keep the strawberry jam in the refrigerator.
