Strawberry jam with elderflower syrup and Prosecco

Ingredients for 1 servings:

  • 1 kg strawberries, prepared and weighed
  • 50 g lime juice
  • 300g Prosecco
  • 250 g elderflower syrup
  • 3 tsp mint, dried
  • ½ tonka bean(s), grated
  • 1 kg gelling sugar 2:1

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Combine all ingredients in a large saucepan and bring to a boil according to the package instructions. Test for settling. Skim the jam if necessary, pour into prepared jars. Seal, turn upside down, and let stand for 5 minutes.
