Strawberry jam with mint

Ingredients for 1 servings:

  • 1 kg strawberries, fresh
  • 10 fresh mint leaves
  • 1 tsp citric acid
  • 1 bag of gelling sugar 2:1

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 45 minutes

Wash, hull, and chop the strawberries. Wash the mint, shake it off well, and chop it finely. I use a mezzaluna knife for this. Place everything in a large pot and stir in the gelling sugar. Let it steep for about 1 hour. Then bring to a boil over high heat and simmer for 4 minutes. While still boiling, pour into prepared jars, immediately screw on the lids, and turn upside down. After about 20 minutes, turn over and let cool.
