Strawberry Juice

Ingredients
 

  • 1 kg Strawberries
  • 500 ml Water
  • 1 Lime
  • 1,5 cups Sugar

Instructions
 

  • Squeeze the lime and bring to the boil together with the water. Bring to the boil once, then remove from the plate and let cool down.
  • In the meantime, wash the strawberries, remove the green and quarter them. Put in a sufficiently large bowl and mash.
  • Pour the cooled lime water on the strawberries, stir and leave covered overnight. Stir every now and then.
  • Put a thin strainer cloth in a sieve, place a saucepan underneath and add the strawberry mixture, strain through and squeeze out the cloth well. Gradually add the sugar to the resulting juice and stir until the crystals have dissolved.
  • Let the strawberry juice steep a little longer, maybe three or four hours, then it can be filled into bottles or glasses. It keeps in the refrigerator for about three days.
