Strawberry-Kiwi Jam

Ingredients for 1 servings:

  • 350 g kiwi(s) (weighed peeled)
  • 650 g strawberries (weighed peeled)
  • 500 g gelling sugar, 2 : 1
  • 1 tsp lemon juice, freshly squeezed

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

wonderfully aromatic

Peel the kiwi fruit with a vegetable peeler. Wash and hull the strawberries, then puree both fruits with a hand blender. Combine the fruit puree and 1 tablespoon of freshly squeezed lemon juice in a large saucepan and add the 2:1 preserving sugar. Mix everything thoroughly and bring to a rolling boil over high heat for 3 minutes, stirring constantly. (Test for setting.) Pour the jam into prepared jars while still hot and seal tightly.
