Strawberry Mousse

Ingredients for 6 servings:

  • 750 g strawberries
  • 3 tbsp orange juice
  • 120 g sugar
  • 450 g yogurt (full milk)
  • 9 sheets of gelatin
  • 400 g cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and clean the strawberries (save a few for garnishing). Blend the remaining strawberries with the orange juice, yogurt and sugar until frothy (approx. 5 minutes). Soak the gelatine in cold water for approx. 10 minutes, then dissolve it over low heat while still dripping wet. Stir in the strawberry mixture a spoonful at a time until the gelatine has cooled, then stir in the rest of the strawberry mixture. Chill until the mixture begins to set. Whip the cream until stiff and fold it in evenly with a whisk. Return the mixture to the fridge and allow it to set completely. We always serve it in a large glass bowl so everyone can help themselves. And of course, garnish beautifully with the remaining strawberries!
