Strawberry muffins

Ingredients for 12 servings:

  • 60 ml oil
  • 60 ml mineral water
  • 120 g sugar
  • 1 tbsp vanilla sugar
  • 180 g flour
  • ½ tsp baking powder
  • 120 g strawberries
  • 2 eggs
  • 4 tbsp eggnog
  • Powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat oven to 180°C (top/bottom heat) or 160°C (fan). Combine oil, mineral water, sugar, and vanilla sugar. Combine flour and baking powder and stir in. Wash 100g of strawberries, pat dry, and remove leaves. Halve or quarter large strawberries. Mix eggs with egg liqueur and fold into the batter along with the strawberries. Divide the mixture among 12 greased muffin cups or those lined with paper baking cups. Bake in the middle rack of the oven for about 25 minutes. Once cooled, dust the muffins with powdered sugar and garnish with the remaining strawberries. For 12 muffins, one muffin has 169 kcal.
