Strawberry-peach jam with a kick

Ingredients for 1 servings:

  • 150 g peach(s) (mountain peaches), roughly diced
  • 250 g strawberries, roughly diced
  • 30 g strawberries, quartered
  • 3 cl schnapps (fruit schnapps) or fruit liqueur (e.g. Berenzen “sour fruits”)
  • 200 g gelling sugar (2:1)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 26 minutes

makes 4 small jam jars

Place the diced fruit into a large saucepan, along with the schnapps or liqueur and the gelling sugar. Bring to a boil briefly. The fruit will begin to break down, so puree. Simmer for about 4 minutes while stirring. Meanwhile, add the quartered strawberries; they should still be recognizable as strawberries. If the jam is too firm when tested for settling, simply add another splash of schnapps; if it’s too soft, add 1-2 tablespoons of gelling sugar and simmer for about another 4 minutes. Once the consistency is as desired, pour the jam into hot, rinsed jars and turn the closed jars upside down.
