Strawberry Quark Cake
The perfect strawberry quark cake recipe with a picture and simple step-by-step instructions.
- 100 g Butter
- 70 g Sugar
- 1 packet Vanilla sugar or vanilla pulp
- 2 piece Free range eggs
- 150 g Flour
- 0,5 packet Baking powder
- 3 tablespoon Milk
- 500 g Strawberries fresh, washed, cleaned
- 250 g Quark lean
- 250 g Quark fat level 20%
- 250 g Sour cream
- Sugar to taste
- Vanilla sugar
- 10 sheet Gelatin
- 1 a cup Whipped cream
- Mix the butter with sugar until frothy and gradually stir in the eggs.
- Add flour, baking powder and milk and stir everything well.
- Fill into a greased baking pan sprinkled with breadcrumbs and bake in the oven (preheat) at 180 ° C for approx. 20 minutes.
For the cream:
- Set aside some nice pieces of the strawberries for decoration, cut the rest into small pieces.
- Mix the quark with the sour cream, add sugar to taste, then stir in the strawberries, preferably with a hand mixer, so that the fruits are partially pureed, but pieces also remain.
- Dissolve the gelatine according to the instructions on the packet and stir into the cream.
- Finally, carefully fold in the whipped cream and place on the cake base, ideally with the help of a plastic ring (see photo) … it is important that the cream already gels a little so that it does not trickle down.
- When the cream has set, decorate with strawberries.
