Strawberry-raspberry soft ice cream

Ingredients for 4 servings:

  • 50 g sugar
  • 2 egg whites
  • 300 g berries, frozen or other frozen fruit

Working time approx. 10 minutes; Total time approx. 10 minutes

Put the sugar in the mixing bowl and process for 8 seconds on speed 5 until powdered sugar. Then add the berries to the bowl. I used 200g strawberries and 100g raspberries, simply because that’s what I had on hand. Of course, any other frozen fruit will do, too. Chop the fruit for 50 seconds on speed 10. Add the 2 egg whites. Be careful, they have to be completely fresh. Mix in the egg whites for 10 seconds on speed 3. Now all that’s left to do is add the butterfly mixer and whip our ice cream for 2 minutes on speed 4 until creamy and fluffy. Serve immediately. Tip: 50g of sugar is great for raspberries. Less is enough for strawberries or other sweeter fruit.
