Strawberry salad with light pistachio cream

Ingredients for 4 servings:

  • 500 g strawberries
  • 10 dashes of sweetener
  • 100 g sesame seeds
  • 100 g pistachios
  • 250 g Cremefine for whipping
  • 1 packet of vanilla sugar
  • 250 g crème légère or crème fraîche

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Hull, wash, and quarter the strawberries, and toss with the sweetener. Let it sit for at least an hour. Toast the sesame seeds in a pan without oil. It will take a while for the sesame seeds to start darkening, but they’ll brown quickly, so stay close to the pan. Place half of the pistachios in a freezer bag and grind them finely with a rolling pin. Whip the crème fraîche with the vanilla sugar. Fold in the crème légère. Garnish the strawberries with the whole pistachios and sesame seeds. Sprinkle the finely ground pistachios over the cream.
