Strawberry sherry jam with white chocolate

Ingredients for 1 servings:

  • 2 kg strawberries, washed and cleaned
  • 1 kg gelling sugar (2:1)
  • 3 small jars of sherry (small shot glasses), sweet
  • 200 g chocolate (block chocolate), white

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Using a hand blender, puree the washed and hulled strawberries until smooth. Transfer to a saucepan and mix with the gelling sugar. Bring the strawberry mixture to a boil and simmer for about 3-4 minutes. Meanwhile, finely grate the chocolate and set aside. Test the strawberry mixture for settling. If it’s set, remove the pan from the heat and stir about 2-3 shot glasses of sherry into the jam. Carefully stir the grated chocolate into the jam and immediately pour into prepared jars. Turn the jars upside down for about 5 minutes. Note: As the chocolate melts, it won’t be visible. However, when the jam cools, it will develop small white chocolate flecks.
