Ingredients for 12 servings:
- 1 bottle of sparkling wine, semi-dry
- 2 packets of pudding powder (cream)
- 6 tbsp sugar
- 750 g strawberries
- 2 tbsp sugar
- 500 g mascarpone

Take 100 ml of the sparkling wine and mix it with both sachets of pudding powder and the sugar. Bring the remaining sparkling wine to a boil. Remove the pan from the heat, add the mixed pudding powder and bring back to a boil while stirring. Immediately transfer the sparkling wine pudding to a bowl and cover with cling film to prevent a skin from forming. Allow the pudding to cool. Wash the strawberries, drain them and remove the stems. Purée one third of the strawberries with the sugar, then quarter the remaining strawberries. Mix the cooled pudding and mascarpone with a hand mixer until smooth. Divide the strawberry purée between 12 champagne glasses. Fill a piping bag with a large nozzle with a good half of the champagne custard and carefully pipe it onto the strawberry purée. Place strawberry quarters (leave 12 for garnishing) on top of the custard in the glasses, spread the remaining champagne custard on top using the piping bag and refrigerate the glasses until ready to serve. Before serving, garnish the glasses with the remaining strawberry quarters. Tip: For an even more sophisticated look, use a skewer to pull strips of strawberry puree from the bottom of the glass up through the cream before serving.
