Strawberry vinegar from strawberry seeds

Ingredients for 1 servings:

  • 2 tbsp strawberry seeds (see note)
  • 200 ml water
  • 300 ml sparkling white wine
  • 100 ml vinegar essence
  • 1 tbsp sugar
  • 1 tbsp honey (acacia honey)

another solution for ‘waste disposal’

Mix water, wine, and vinegar essence. Dissolve the sugar and honey in the mixture. Place the strawberry seeds in a bottle and pour the vinegar solution over the seeds. Close the bottle tightly and let it steep in a sunny spot for about four weeks, shaking occasionally. After the specified time, filter the vinegar through cheesecloth and pour into smaller bottles. The vinegar will become increasingly more intense in color over time. Note: Strawberry seeds are a waste product; if you strain strawberries for strawberry sauce or juice strawberries in an electric juicer, these seeds remain.
