Ingredients for 1 servings:

  • 30 g yeast
  • 300 g wheat flour type 550
  • 140 ml milk, lukewarm
  • 30 g sugar
  • 30 g butter
  • 1 pinch of salt
  • 1 egg(s)
  • 250 g butter, cold
  • 250 g sugar
  • 250 g wheat flour type 550
  • ½ tsp cinnamon
  • some water for brushing

Instructions

Working time approx. 15 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 10 minutes

Mix the yeast with lukewarm milk, the egg, and one-third of the flour. Let the starter dough rest for about 10 minutes. Then knead it with the remaining ingredients for the roll dough (about 5 minutes). Let the dough rest for another 15 minutes. In the meantime, prepare the crumble dough. To make the crumble, simply knead together the butter, sugar, flour, and cinnamon. Shape the roll dough into 10 round rolls and place them on a baking sheet lined with baking paper, leaving enough space between them. Brush the rolls with water, spread the crumble on the rolls, and press them down lightly. Let the crumble rolls rise for another 15 minutes. Bake in a preheated oven at 180-200°C (top/bottom heat) for about 10-15 minutes.
