Ingredients for 1 servings:
- 125 g flour
- 50 g sugar
- 80 g butter
- 3 eggs
- 150 g sugar
- 100 g flour
- 50 g starch flour
- 1 tsp baking powder
- 200 g red jam (multi-fruit)
- 1 tbsp jam, additional
- 1 pack of pudding powder, vanilla flavor
- 350 ml milk
- 45 g sugar
- 1 pack of cake glaze
- 250 ml apple juice
- 500 g berries, frozen or fresh
Instructions
Working time approx. 1 hour 30 minutes; Total time approx. 1 hour 30 minutes

Knead the first three ingredients (butter, sugar, and flour) into a dough and chill for 30 minutes. Line a greased springform pan with the dough and prick several times with a fork. Bake in a preheated oven at 180°C (fan oven) for 12 minutes. Remove from the pan immediately and let cool. The next five ingredients: beat the eggs with 3 tablespoons of hot water until frothy. Add the sugar and continue stirring. Slowly fold in the flour, cornstarch, and baking powder. Spread the mixture onto a baking sheet lined with baking paper and bake at 200°C for 15 minutes. Turn out onto a sugared cloth, moisten the paper, and peel off. Spread everything with the 200g of jam and roll up. Cut into 14 slices. Place the springform pan around the shortcrust pastry. Spread the shortcrust pastry with the one tablespoon of jam. Cover everything tightly with the slices (cut side up, so you can see the rolled-up part!). Mix the pudding mix with the milk and 20g of sugar. Once cooled, pour into the springform pan and smooth the surface. Spread the berries over the pudding. Prepare the glaze with the apple juice and the remaining sugar and then pour it over the berries. Let it cool completely before removing it from the pan.
