Stuffed and Baked Peaches (Walter Freiwald)

- 4 Pc. Peaches fresh
- 100 g Amarettini almond biscuits
- 50 g Chocolate
- 2 Pc. Egg yolk
- 2 tbsp Sugar
- 200 g Mascarpone
- Halve the peaches, remove the stones. Fill the crumbled amaretti and the grated chocolate into this cavity. Place the halves side by side in a flat shape (opening facing up). Beat the egg yolks with the sugar to a thick white cream, only then work in the mascarpone. Pour this cream over the filled peaches. Bake in the 180 degree oven for about 20 minutes.
