Stuffed avocados

Ingredients for 2 servings:

  • 2 slices of bacon
  • 30 g pine nuts
  • 100 g beefsteak tomatoes
  • ½ bunch parsley, fresh
  • 1 tbsp mayonnaise
  • 1 pinch of salt
  • Pepper, freshly ground
  • 2 avocados, ripe
  • ½ lime(s)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

With bacon, tomato and pine nuts

Toast the pine nuts in a pan and let cool. In the same pan, fry the bacon slices on both sides until crispy, then drain on kitchen paper. Chop the tomatoes and finely chop the parsley. Break the cooled bacon into pieces and mix with the pine nuts, tomatoes, and parsley into the mayonnaise. Season with salt, pepper, and a squeeze of lime juice. Cut the avocados lengthwise and remove the pits. Spoon the mayonnaise mixture into the avocados.
