Stuffed avocados

Ingredients for 4 servings:

  • 2 avocados, ripe
  • 2 tomatoes, ripe
  • 250g mozzarella
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • n. B. Salad herbs
  • e.g. basil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Starter or side dish with avocado, mozzarella and tomato

Halve the avocados and remove the pit. Use a teaspoon to scoop out some of the flesh. You won’t need it anymore, so you can use it for something else. Dice the mozzarella and tomatoes and place them in a bowl. Mix the balsamic vinegar and olive oil in a cup, then add the salad herbs. Add the marinade to the mozzarella and tomato cubes and mix well. Finally, fill the avocado cavities with the mixture and garnish with a basil leaf. Marinade tip: Some people like their avocados more acidic, others not. Simply vary the amount of balsamic vinegar and olive oil accordingly. These quantities are ideal for an appetizer. For a side dish, plan on serving one whole avocado per person.
