Stuffed celery schnitzel with Munster cheese

Ingredients for 4 servings:

  • 2 celeriac, peeled
  • Salt and pepper, white from the mill
  • 1 tsp lemon juice
  • 1 cheese, German Munster cheese (small wheel 150g)
  • 1 tbsp flour
  • 1 egg(s), beaten
  • 6 tbsp breadcrumbs
  • 2 tbsp clarified butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the celery in salted water until al dente. Cut each celeriac crosswise into 4 slices, season with salt and pepper, and drizzle with lemon juice. Cut the Munster cheese into 4 slices and place each between two celery slices. Coat the stuffed celery first in flour, then in the egg, and finally in the breadcrumbs, pressing them down firmly. Fry the celery slices in clarified butter until golden brown.
