Stuffed cherry tomatoes Italian style

Ingredients for 4 servings:

  • 500 g cherry tomatoes
  • 150 g cream cheese, natural
  • 3 tbsp Parmesan, grated
  • 1 bag of salad seasoning mix
  • 1 tbsp pine nuts,
  • 4 tbsp olive oil
  • Parsley, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Delicious side dish for buffets, barbecues, brunches, etc.

Wash the tomatoes, pat dry, and cut off small tops. Finely dice all the tops. Hollow out the tomatoes with a small teaspoon. Mix the cream cheese, Parmesan cheese, salad seasoning mix, diced tomatoes, and chopped pine nuts. Pipe the filling into the hollowed tomatoes using a piping bag fitted with a small nozzle. Arrange the tomatoes on a platter, drizzle with olive oil, and garnish with chopped parsley.
