Ingredients for 4 servings:
- 4 chicken breast fillets
- 1 pack of feta cheese
- 1 cup(s) rice
- 1 can of corn
- 1 can/n peas
- 1 can of mushrooms
- salt and pepper
- Paprika powder
- Garlic
- Herbs of Provence
- oil
- vegetable broth
- Tomato(s), pureed
- possibly turmeric
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cut a slit in the chicken breast and stuff it with a slice of feta cheese. Place it in a baking dish and season generously with salt, pepper, paprika, garlic, and Provençal herbs. Brush with oil. Bake in the oven at about 200 degrees Celsius until tender. Meanwhile, cook the rice in vegetable broth until tender, add the vegetables and mushrooms, stir in some tomato puree, and add a little turmeric for color, if desired. Bring to a boil and season to taste. The rice can also be prepared with plenty of fresh vegetables.
