Stuffed Croissants Ala Amaryllis

The perfect stuffed croissants ala amaryllis recipe with a picture and simple step-by-step instructions.

Dough:

  • 520 g Flour
  • 120 ml Lukewarm milk
  • 120 ml Lukewarm water
  • 60 ml Oil
  • 1 Pck. Dry yeast
  • 1 tsp Salt
  • 1 Egg yolks for brushing
  • 1 Protein

Filling:

  • 250 g Minced meat
  • 2 medium sized Onions
  • 1 tbsp Tomato paste
  • Salt
  • Pepper
  • Sweet paprika
  • 8 Kräuter, TK
  • Finely chopped parsley

Tip:

  • You can also vary the filling. For example with feta and spinach. Or sucuck and tomato. Or just cheese. There are no limits to the imagination.
  1. Make a smooth and non-sticky dough from the dough and let it rise in a warm place for 30-45 minutes.
  2. In the meantime, prepare the filling.
  3. Fry the onions in a little oil and add the minced meat. Add tomato paste and fry a little. Now season to taste. and let cool on a plate.
  4. PREHEAT THE OVEN TO 200 DEGREES UNDER HEAT !!!
  5. Shape the dough into small balls.
  6. Roll out this round and place the filling on the lower side.
  7. Roll up carefully and tightly. and shape into a croissant.
  8. Place on a baking sheet lined with parchment paper.
  9. Now do the same with the rest.
  10. When all the croissants are formed, let rise again briefly for about 15 minutes.
  11. Brush with egg yolk and sprinkle some sesame / black cumin.
  12. Now bake in the oven for about 15-20 minutes until golden brown.
